What do you do when you have a bunch of fresh blueberries & berry vegan yogurt? You make the best Vegan Blueberry Muffins of course!
As I’ve stated before in my baking posts, I’m not a baker, but I do enjoy baking from time to time. And fortunately for me, my mom is an all around great cook & baker. So whenever I’m not sure where to start, she’s my go to.
Because I’m not a great baker, I like to keep my recipes SUPER easy so that I know I won’t mess them up. I mean, sometimes that still happens but shh… haha.

Ingredients
2 TBS. Ground Flax Seed
6 TBS. Water1 C. Blueberries (I used fresh but frozen works too)
1 C. All-Purpose Gluten Free Baking Flour
1/4 C. Stevia or any other sugar you prefer (I find the blueberries & yogurt to be sweet enough w. the stevia)
1/2 tsp. Baking Soda
1 tsp. Baking Powder
1 C. Vegan Yogurt (I used Riviera Mixed Berry)
1/2 C. Avocado Oil
1 tsp. Vanilla Extract
Pinch of Brown Sugar to top each muffin
Extra Blueberries for toppers
Directions
- To start, let’s make our flax eggs. Simply add the 6 TBS. of water to the 2 TBS. of ground flax seed. Stir & let sit for about 10 mins. This will let the vegan egg congeal a bit.
- If you’re using frozen blueberries you can measure your 100 G. & let them sit out while you prepare everything else.
- Preheat your oven to 350F & line your muffin pans with oil or papers.
- Mix your dry ingredients together & set aside.
- Mix your wet ingredients together, including your flax egg & blueberries.
- Next, add your wet ingredients to the dry & mix it all up.
- Using a ladle, scoop your mixture into each muffin tray. Leave about half an inch from the muffin papers for expansion.
- Once the muffin mix has been added to the trays, top each muffin with 3-5 blueberries & a pinch of brown sugar.
- Add your trays to the oven & bake for 25-30 mins. They will lightly brown & expand. You can test the middle to make sure they’re cooked through but these are moist muffins because of the yummy yogurt.
- Once they’re done, let them sit for about 10 mins. & enjoy!

Notes
- Ps. My husband ate a whole tray to himself the day I made these haha.
I had originally made this recipe because I wanted to show everyone how easy it is to replace a chicken’s egg with a flax egg for baking. I was so happy & surprised with how they turned out. My mom ended up making them the following week because she loved them so much.

These Vegan Blueberry Muffins look and sound delicious. Thank you for sharing the recipe on how to make them.
Vegan blueberry muffins sound delicious! I love baking!
This is great! My husband has been craving bread and breakfast products and I showed him this recipe for vegan blueberry muffins. He is so excited because all of the gluten and egg-free things he’s had are so dry.
Honestly, it’s the yogurt. I want to try using a plain oat based in a gluten free bread recipe next.
Love blueberry muffins (especially moist ones)! Gonna try this vegan recipe!
I use flax “eggs” too! And I love this recipe. What a great idea to use vegan yogurt! I’ll be trying this.
I want to use the vegan yogurt in more baking dishes now. It really made it.
These blueberry muffins look yummy! I am not the best at baking either, but maybe I can make these. After looking at these pictures, I really want blueberries now.
I only know easy baking haha
These vegan blueberry muffins sound so yummy! I haven’t spotted Riviera yogurt in the store yet, but we get a bunch of other varieties because my kids are obsessed lol. And like your hubby, if I made these, my kids would eat an entire tray too. Each. 😉
Keep your eyes out, Riviera is one of my fav vegan yogurts now. They were coconut based but I saw they have oat based now too. Curious to try that one.
How funny right? I mean I ate my fair share too! <3
Ooooh! Oat based? And coconut sounds refressing. My kids like the cashew ones from Trader Joes and some of the basic brands at the grocery store: Silk, So Delicious, etc. But I like that TJ’s ones are organic and a good price. 😉
I wish we had Trader Joe’s here too ☹️
I LOVE blueberry muffins, and I only use easy recipes in my cooking. Thanks for this great vegan blueberry muffin recipe!
I think blueberry muffins are my fav muffins.
What a great recipe for vegan muffins! I love adding yogurt to breads, it makes it SO moist!
I can’t wait to try it in other baking recipes now.
Love a good moist blueberry muffin! This vegan version looks absolutely delish!
Thank you! <3
Who doesn’t love plump, juicy, blueberries, RIGHT! YUM!
So good!
Those moist vegan blueberry muffins look so delicious! I probably can’t eat them because the baking powder and GF flour have corn in them, but I may be able to find substitutes! Those look amazing!
I use Bob’s Red Mill GF Flour & I don’t think it has corn in it. If you can find that one near you.
I love that you can ask your mom for cooking/baking advice. I always call my mom for help. I love your video showing how to make moist vegan blueberry muffins because it looks so easy. They look so delicious. Your shopping recommendations look good, too, since I don’t have much baking equipment.
Mom’s really just know stuff! haha
