What do you do when you have a bunch of fresh blueberries & berry vegan yogurt? You make the best Vegan Blueberry Muffins of course!

As I’ve stated before in my baking posts, I’m not a baker, but I do enjoy baking from time to time. And fortunately for me, my mom is an all around great cook & baker. So whenever I’m not sure where to start, she’s my go to.

Because I’m not a great baker, I like to keep my recipes SUPER easy so that I know I won’t mess them up. I mean, sometimes that still happens but shh… haha.

How To Make Easy Moist Vegan Blueberry Muffins

I like to make my baking recipes as easy as possible. So please enjoy these EASY vegan & GF blueberry muffins!

Ingredients

  • 2 TBS. Ground Flax Seed
    6 TBS. Water

  • 1 C. Blueberries (I used fresh but frozen works too)

  • 1 C. All-Purpose Gluten Free Baking Flour

  • 1/4 C. Stevia or any other sugar you prefer (I find the blueberries & yogurt to be sweet enough w. the stevia)

  • 1/2 tsp. Baking Soda

  • 1 tsp. Baking Powder

  • 1 C. Vegan Yogurt (I used Riviera Mixed Berry)

  • 1/2 C. Avocado Oil

  • 1 tsp. Vanilla Extract

  • Pinch of Brown Sugar to top each muffin

  • Extra Blueberries for toppers

Directions

  • To start, let’s make our flax eggs. Simply add the 6 TBS. of water to the 2 TBS. of ground flax seed. Stir & let sit for about 10 mins. This will let the vegan egg congeal a bit.
  • If you’re using frozen blueberries you can measure your 100 G. & let them sit out while you prepare everything else.
  • Preheat your oven to 350F & line your muffin pans with oil or papers.
  • Mix your dry ingredients together & set aside.
  • Mix your wet ingredients together, including your flax egg & blueberries.
  • Next, add your wet ingredients to the dry & mix it all up.
  • Using a ladle, scoop your mixture into each muffin tray. Leave about half an inch from the muffin papers for expansion.
  • Once the muffin mix has been added to the trays, top each muffin with 3-5 blueberries & a pinch of brown sugar.
  • Add your trays to the oven & bake for 25-30 mins. They will lightly brown & expand. You can test the middle to make sure they’re cooked through but these are moist muffins because of the yummy yogurt.
  • Once they’re done, let them sit for about 10 mins. & enjoy!

I had originally made this recipe because I wanted to show everyone how easy it is to replace a chicken’s egg with a flax egg for baking. I was so happy & surprised with how they turned out. My mom ended up making them the following week because she loved them so much.
