Let me just start this by saying, I AM NOT A BAKER haha, but I can follow directions very well & I have a good sense of what I can & can’t tweak. So… I found an easy Vegan Chocolate Cake Recipe for National Chocolate Cake Day and I tweaked it slightly.

Before I begin, do you know what I always find funny about food blogs or recipe posts? The long a*s freaken introductions! Especially when it’s just a simple vegan chocolate cake recipe haha. What’s up with that?

As mentioned, I am not a baker so I needed an easy recipe I could tweak & make my own.

Ingredients

  • 1 cup Unsweetened Vanilla Oat Milk

  • 1 TBS. Apple Cider Vinegar

  • 2 C. All-Purpose Flour (I used Bob’s Red Mill)

  • 1 3/4 C. Stevia or Sugar (Depends on your sweet tooth. I find the icing sweet enough.)

  • 3/4 C. Cocoa Powder

  • 2 tsp. Baking Powder

  • 1 1/2 tsp. Baking Soda

  • 1 tsp. Salt

  • 1/2 C. Avocado Oil (Baking oil of choice)

  • 2/3 C. Unsweetened Applesauce

  • 1 TBS. Pure Vanilla Extract

  • 1 C. Boiling Water

  • Icing
  • To make this real simple, I used Betty Crocker’s Creamy Deluxe Chocolate Icing. Majority of Betty Crocker Icing’s are accidentally vegan, so yay! I found 1 tub to be enough but if you want to lay it on thick, then get 2.

Directions

  • Preheat oven to 375 degrees F and grease two 9-inch cake pans (I used round/low profile pans).
  • In a separate bowl, add the oat milk and the apple cider vinegar. Stir lightly & set aside to curdle.
  • In a larger bowl, add the dry goods (flour, sugar, cocoa powder, baking powder, baking soda and salt). Whisk well to combine.
  • Next add the wet stuff (oil, applesauce, vanilla and almond milk/vinegar mixture). Mix on medium speed with a hand mixer or a regular whisk works well too, until well combined. 
  • Carefully start to pour in the boiling water. Lowering your hand mixture speed. Keep mixing & adding all of the water a little at a time. It will start to be quite runny but that’s how we want it.
  • Divide the batter into your 2 cake pans. Bake for 35 mins & then use a toothpick to check the centre. If it needs a little more time do 5 min intervals, you don’t want to burn the outside layer. If the toothpick comes out clean we’re good to go!
  • Let the cakes cool before removing them from their pans. Once fully cooled, you can ice your cake. Place a nice layer in the centre, then add the top layer, then ice the sides & the top. Voila! Super simple right?

Notes

  • Coming from a nonbaker, this recipe was really easy to make. All in all it took maybe 10 – 15 mins to prepare, 35 mins to bake, an hour or so to cool, & then maybe 10 mins to put on the icing.

The results, I thought it tasted super yummy! It was moist and sweet. I think next time I’d do half stevia & half sugar though. I thought the icing was sweet enough for myself but I know most people expect cake to be sweet haha, so that’s just a tip I learned from this.
