For National Chocolate Cake Day
Let me just start this by saying, I AM NOT A BAKER haha, but I can follow directions very well & I have a good sense of what I can & can’t tweak. So… I found an easy Vegan Chocolate Cake Recipe for National Chocolate Cake Day and I tweaked it slightly.
Before I begin, do you know what I always find funny about food blogs or recipe posts? The long a*s freaken introductions! Especially when it’s just a simple vegan chocolate cake recipe haha. What’s up with that?
Now, I’m not judging ‘cause obviously people like them or that wouldn’t be the on-going trend right? But for me, I’m always just quickly scrolling past the long intros & photos and straight down to the good stuff. I’m always asking the site, …
But how do I make this thing?
The original recipe author comes from Nora Taylor at Nora Cooks.

Ingredients
1 cup Unsweetened Vanilla Oat Milk
1 TBS. Apple Cider Vinegar
2 C. All-Purpose Flour (I used Bob’s Red Mill)
1 3/4 C. Stevia or Sugar (Depends on your sweet tooth. I find the icing sweet enough.)
3/4 C. Cocoa Powder
2 tsp. Baking Powder
1 1/2 tsp. Baking Soda
1 tsp. Salt
1/2 C. Avocado Oil (Baking oil of choice)
2/3 C. Unsweetened Applesauce
1 TBS. Pure Vanilla Extract
1 C. Boiling Water
- Icing
To make this real simple, I used Betty Crocker’s Creamy Deluxe Chocolate Icing. Majority of Betty Crocker Icing’s are accidentally vegan, so yay! I found 1 tub to be enough but if you want to lay it on thick, then get 2.
Directions
- Preheat oven to 375 degrees F and grease two 9-inch cake pans (I used round/low profile pans).
- In a separate bowl, add the oat milk and the apple cider vinegar. Stir lightly & set aside to curdle.
- In a larger bowl, add the dry goods (flour, sugar, cocoa powder, baking powder, baking soda and salt). Whisk well to combine.
- Next add the wet stuff (oil, applesauce, vanilla and almond milk/vinegar mixture). Mix on medium speed with a hand mixer or a regular whisk works well too, until well combined.
- Carefully start to pour in the boiling water. Lowering your hand mixture speed. Keep mixing & adding all of the water a little at a time. It will start to be quite runny but that’s how we want it.
- Divide the batter into your 2 cake pans. Bake for 35 mins & then use a toothpick to check the centre. If it needs a little more time do 5 min intervals, you don’t want to burn the outside layer. If the toothpick comes out clean we’re good to go!
- Let the cakes cool before removing them from their pans. Once fully cooled, you can ice your cake. Place a nice layer in the centre, then add the top layer, then ice the sides & the top. Voila! Super simple right?

Notes
- Coming from a nonbaker, this recipe was really easy to make. All in all it took maybe 10 – 15 mins to prepare, 35 mins to bake, an hour or so to cool, & then maybe 10 mins to put on the icing.
The results, I thought it tasted super yummy! It was moist and sweet. I think next time I’d do half stevia & half sugar though. I thought the icing was sweet enough for myself but I know most people expect cake to be sweet haha, so that’s just a tip I learned from this.
Let me know if you try this recipe or if you have your own easy vegan chocolate cake recipe too. I’d love to try them out. If I get into baking, maybe I’ll finally have an excuse to buy one of those beautiful Kitchen Aide Mixers.
There you have it, a super easy vegan chocolate cake recipe for National Chocolate Cake Day. It’s not hard to veganize our go-to dishes & help make day to day life more cruelty-free. By not using ingredients such as eggs or milk, we’re not contributing to the cruel & inhumane practices that go on in dairy & egg farms. So thank you for that conscious effort. The animals, the planet, and your body thanks you! <3

Delicious – tasty, vegan and allergy friendly too! Betty Crocker icing is the best when you want to make things simple, but it’s hard not too eat straight from the tub 🙂

Nice! Hope you enjoy it <3
My mouth is watering. Chocolate is my favorite.
I wish I had more tbh haha.
Sounds incredible! Gotta say – raising your own eggs – via your own chickens – obviates the egg farm controversy. Thanks for the recipe!
As a vegan I have to disagree with that. Unfortunately it still exploits a chicken to take from them. It’s much better to let them feed on their own eggs, “To improve the quality and prolong the length of chickens’ lives, they should be fed their own eggs, including the shells, so that they can gain back the nutrients they lose by laying eggs so often. Moreover, for chickens who are most susceptible to reproductive issues, the use of contraception should be considered in order to limit their egg production.” Veganism is about not thinking that animals are here for us. But I appreciate your lessening of their harm.
Looks like a yummy cake!
It was quite tasty. <3
This sure does look yummy!
It was a nice random surprise to have a cake in the house haha.
It looks really moist!
It was. The middle of both layers was super soft.
THIS LOOKS AMAZING! Planning to serve this to my vegan friends can’t wait to taste test it myself!
Aw love that! Let me know how it turns out <3
looks yummy, now if we could just get rid of all the calories 🙂
Haha I know right? That’s why I like using the Stevia, the icing is sweet enough haha.
I love anything with chocolate. One of my son’s Birthday is coming up. I might give it a try!
Chocolate is just so good.
Yuuuum! My husband’s birthday is on National Chocolate Cake Day so we usually have a chocolate cake or two around here! I can’t wait to try this one!
Oh that’s awesome! An excuse to have Chocolate cake & a birthday cake in one day haha.
Yup, and I love that we have some accidentally vegan frostings!
super key haha
That vegan cake looks amazing! Pure perfection!
Aw thanks! It turned out considering I do not bake haha.
My mouth is watering. Looks delish!!
So yummy! <3
Can’t say no to any type of chocolate cake! Will try!
It’s hard to not like chocolate cake.
I’ve always wondered why food blog intros are so long too! Haha. I’m not vegan but love vegan baked goods!
The art of food I suppose? I always just scroll right to the food though haha.
It is so much fun to tweak recipes and make them your own.
It is. We’re all like mini little home chefs haha
LOL well to answer your question about the long intros for food bloggers (since I am one), it’s for the SEO! I use keywords like other types of bloggers, and fit them into the post. 🙂
This chocolate cake looks delicious!!
haha I know I know. I’m only teasing. I remember when they used to be shorter and then eventually you’d be scrolling and be like, “did I pass the recipe?” haha. But I totally get it. It’s an art too! And thank you, coming from and actual baker <3
I appreciate the recipe at the top! When I am hungry I want directions first, story later. LOL
Ooh yes smart! Recipe first, storytime while the food is in the oven!
Your creations are always so pretty and you make it sound so easy, even for me. And hey I appreciate the short intro haha!
Aw thanks so much! I tried knowing that I don’t bake to find something super easy for us non-bakers haha. We want home baked good too!
Omg… this sounds so delicious!! It’s amazing how eating a healthier lifestyle doesn’t mean you have to miss out on sweets!
Exactly, we all deserve treats from time to time even when you try to live a healthier lifestyle. I’m a big salt tooth at heart so sometimes I just need a french fry haha.
