With the holidays fast approaching I thought it would be great to share a tried & tested Vegan Turkey dinner recipe, paired with 6 delicious sides. Dessert is on your own but I suggest Vegan Apple Pie with Vanilla Oat Ice Cream, yum!
Like any other traditional Christmas dinner it does take a full day of cooking and preparing but it is well worth the effort. Some of these recipes are adapted and others are of my own or rather I should give credit to my awesome mother here, haha. I hope you enjoy them and please take photos and share them with me. The Main Event – Vegan Turkey

- Dry Ingredients
2 ½ cups Vital Wheat Gluten
1 cup Chickpea Flour
¼ cup Nutritional Yeast
Textured Vegetable Protein (TVP) to batter the outside layer for crunch
- Seasoning
1 tsp. poultry seasoning
1 tsp. onion powder
1 tsp. garlic powder
¼ tsp. black pepper
- Wet Ingredients
1 chopped onion
¼ cup grapeseed oil
1 ½ cups water
1 tbs. chicken free bouillon or veggie broth (wet or dry works)
1 tbsp. soy sauce
1 tsp. liquid smoke
- – 4 toothpicks
Directions
- Heat a pan on med/low heat & add grapeseed oil
- Toss in onions cooking until translucent
- Turn off stove & add in seasoning ingredients (if you used a dry bouillon add it in here)
- Pour water, soy sauce, & onion mixture into a blender & liquify
- Fill a steamer with water & bring to a boil
- While the water is heating up whisk together the dry ingredients
- Add the stuff from the blender into your dry ingredients & mix well. A dough will start to form, kneed for about 3 minutes
- Shape the dough into a “turkey” by making a round bigger base and two smaller drumsticks
- Coat & roll the “turkey” pieces in the TVP
- Brush a large piece of tinfoil with oil & wrap the turkey base. Do the same with two smaller pieces of tinfoil for the drumsticks
- Place the “turkey” in the steamer & cover. Let steam for about 1 hour. 45 minutes for the drumsticks
- After 45 minutes preheat oven to 350 degrees
- After an hour of steaming carefully take the “turkey” out of the steamer & place in the oven. Leave the “turkey” & drumsticks wrapped in the tinfoil. Bake for 45 minutes. 30 minutes for the drumsticks.
- Take “turkey” out of the oven & let cool. Once cooled carefully unwrap & attach the drumsticks with 2 toothpicks on each side

My Mom’s Amazing Stuffing

Ingredients
½ cup finely chopped celery leaves
1 finely chopped onion
1 stick earth balance cooking spread or 2 tbsp. vegan margarine
½ cup organic grape seed oil
1 vegan chicken flavoured bouillon cube or 1 tsp salt
¼ tsp. fresh ground mixed crushed peppercorns
1 tsp. sage
¼ tsp. thyme
1 cup chopped or thinly sliced mushrooms
1 loaf bread crust removed and cut into cubes in a large bowl
Directions
- In a pot add earth balance & oil. Heat on medium/low heat until completely melted and blend together
- Add in remaining ingredients leaving out mushrooms & bread
- Cover & bring to a boil
- Reduce heat & cook for about 1 hour on low heat stirring occasionally as needed
- Add in mushrooms & cook for another 10 minutes
- Remove from heat & let cool until room temperature
- Slowly pour mixture over bread cubes intermittently stopping to toss the mixture throughout the bread. The bread should be a bit soggy when finished. Do not squeeze the bread.
- Place in a covered casserole dish and bake at 350 for about an hour or longer
- Taste test & serve
Roasted Brussels Sprouts Recipe
Prep time: 15 mins Cook time: 45 mins Total time: 1 hour Serves: 4
Ingredients
1 ½ lbs. brussels sprouts ends trimmed & top leaves removed
3 tbsp. grapeseed oil
1 tsp. sea salt
½ tsp. fresh black pepper
Directions
- Preheat oven to 400 degrees
- Place trimmed Brussels sprouts, oil, salt & pepper in a large resealable plastic bag. Seal tightly & shake to coat
- Pour onto a baking sheet & place on center oven rack
- Roast in oven for 30 to 45 minutes, shaking pan every 5 to 7 minutes for even browning
- Reduce heat when necessary to prevent burning
- Brussels sprouts should be darkest brown, almost black, when done (not burnt though)
- Adjust seasoning with salt if necessary
- Serve when done

High Protein Garlic Mashed Potatoes Recipe
Prep time: 20 mins Cook time: 35 mins Total time: 55 mins Serves: 8
Ingredients
10-12 large(ish) organic red potatoes
3-3.5 cups cooked navy beans (2 small cans)
¼ cup Earth Balance buttery spread or vegan margarine
2 tbsp. unsweetened almond milk
3-4 large cloves of garlic
1 tsp. sea salt
1 tsp. ground paprika
Freshly ground black pepper, to taste
Directions
- Wash potatoes with a potato scrubber, chop into large chunks & toss into a large pot. Leave skin on
- Fill with water until potatoes are covered
- Cook on medium/high heat for 30-35 minutes until fork tender
- Drain potatoes & place in a large bowl
- After cooling for a few minutes, take a potato masher & while mashing add milk and Earth Balance
- Add garlic to a food processor and process until finely chopped
- Add drained beans, salt, ½ tsp paprika & process until mostly smooth
- Add bean mixture to potato mixture and mash until mixed
- Sprinkle with black pepper, remaining paprika & additional sea salt

Vegan Gravy Recipe
Prep time: 10 mins Cook time: 15 mins Total time: 25 mins Serves: 4-6
Ingredients
1 cup vegetable broth
¼ cup nutritional yeast
1 tsp. yellow mustard
1 tbsp. tamari
1 large garlic clove minced
1 tbsp. cornstarch or arrowroot powder
2 tbsp. tahini
1.5 tbsp. balsamic vinegar
1 chicken free bouillon
½ tsp. agave nectar
2 tbsp. olive oil
5-10 dashes liquid smoke
1 tbsp. blackstrap molasses
Directions
- In a blender or food processor combine all ingredients and puree until smooth
- In a pot on medium/high heat, add mixture & bring to a boil
- Reduce to low and stir frequently to thicken
- Remove from heat and serve
- Add additional agave, water, or vinegar if needed to adjust taste

Green Beans with Slivered Almonds Recipe
Prep time: 15 mins Cook time: 20 mins Total time: 35 mins Serves: 6
Ingredients
½ cup sliced or slivered almonds
1 lb. fresh green beans
1 tbsp. lemon juice
1 tsp. grapeseed oil
salt & pepper to taste
Directions
- Wash and cut off the ends of green beans
- Slice beans in 2 inch pieces
- Toast almonds on a roasting pan in the oven at 300 degrees for 10 – 15 minutes
- Add beans to a steamer basket in a saucepan with about 1 inch of water. Steam for 5 – 7 minutes until green beans are crunchy tender
- Remove steamer basket, drain off water
- Add grapeseed oil & lemon juice to the pot
- Add the greens beans & toasted almonds, a sprinkle of salt & pepper if desired, and gently stir
- Serve immediately
Cranberry Sauce Recipe
Prep time: 0 mins Cook time: 15 mins Total time: 15 mins Serves: 6+
Ingredients
1 ¾ cups fresh cranberries or frozen
½ cup pure maple syrup
¼ tsp. sea salt
1 tsp. balsamic vinegar
Directions
- In a pot on medium/high heat combine the ingredients & bring mixture to a boil stirring occasionally
- Once boiling, reduce heat to low & cook for 15 minutes stirring occasionally
- Once sauce has thickened, taste test, and add vinegar
- Serve warm or chilled

I appreciate some new ideas for vegan holiday meals! I primarily eat just veggies for the holidays although I like trying new recipes. I’m preparing a vegan lasagna for Christmas dinner.
Lasagna is the bomb. We usually eat alkaline day to day (veggies) but for treats we’ll do stuff like this etc.

The photos of your feast look great! When I was vegan for a couple of years, we also concentrated on whole foods, so didnt try to mimic meat.

Honestly, I try to eat whole foods over processed all the time but once in awhile I’ll do a treat like Beyond burgers etc. But it’s definitely healthier to eat whole foods than foods with preservatives for sure. Merry Christmas to you too!
