Go to your browser right now and type in “The Best Easy Vegan Brownies Recipe” 😅. There you will find pages of “The Best Easy Vegan Brownies Recipe Ever” and they’re probably all really yummy but they can’t possibly be THE BEST because well, these ones are the best, duh 🤪.
Surprisingly I wasn’t a big brownie kid. It wasn’t really in our house growing up and I never chose it for dessert when going out to dinner either. So I’m not sure if fudgey chewy chocolatey goodness tastes better as an adult or not but I’m all about these vegan brownies now that I’m grown haha.
I came up with this recipe with my mom when we were having some serious chocolate cravings 😅. Then she got a delicious recipe from one of her vegan baker friends & we just tweaked them and combined the stuff that we liked best. So it’s a bit of a mix of a recipe but I know you’re going to just love them!
Not Another “The Best Easy Vegan Brownies Recipe Ever”

4 TBS. Chilled Instant Coffee
4 TBS. Instant Vegan Hot Chocolate
2 TBS. Ground Flaxseed
1/2 C. Semi-sweet Vegan Chocolate Chips
1/2 C. Smashed-up Vegan Chocolate Bar
4 TBS. Earth Balance or Any Vegan Butter
1 C. Brown Sugar
1-2 tsps. Vanilla Extract
1/4 C. Cocoa Powder
3/4 C. Bob’s Red Mill GF All-Purpose Flour
1 tsp. Salt
Directions
- Add the coffee & 2 TBS. of hot chocolate. You’ll want to brew your instant coffee/hot chocolate mix well before so that it’s cool.
- Next, prepare your flax egg by adding the ground flaxseed and 6 TBS. of your chilled instant coffee & hot chocolate mix.
- Let your flax egg set for 10-15 mins so that it gets kind of gel-like.
- In a small pot melt your chocolate chips & smashed up chocolate bar on low heat to not burn the chocolate. Once melted, cover and set aside.
- Preheat oven to 350F.
- Add your sugar & vegan butter into a large mixing bowl & mix well together.
- Add flax eggs, vanilla extract and melted chocolate & mix well.
- Lastly, add the sifted flour, salt, cocoa powder & hot chocolate powder. Don’t overmix, just combine.
- Add any extra chocolate chips or chocolate bar chunks.
- In a lined baking pan (square or rectangular), add your mixture.
- Bake for 30 mins and let cool.
- Once fully cooled, slice up & enjoy!

Yum! I love that you included chocolate chips AND a chocolate bar. Because. Well. One source of chocolate isn’t enough! LOL! And coffee in chocolate desserts is always a plus!! Can’t wait to make these!
The last time I made them I used a No Whey version of a Mars bar, incredible! My mom taught me about the coffee with the chocolate. Apparently it helps bring out the chocolate’s flavours. ♀️

Omg! Now I am craving Brownies. This recipe looks so delicious. I love that it requires coffee. That is so unique. Chocolate and coffee what a great combination.
That’s actually a tip my mom gave me. Apparently the coffee will help bring out the chocolate’s flavours. ♀️
