I think I’ve come to the realization that I am truly not a baker but I do enjoy trying haha. I’ve also realized that my baking style is whatever is the easiest way to get it done! So, that being said, I’ve come up with a super easy vegan cupcake recipe for St. Patrick’s Day, yay!
Easy Vegan St. Patrick’s Day Cupcakes

minutesThe easiest vegan cupcake recipe for St. Patrick’s Day
Ingredients
1 C unsweetened non-dairy Milk
1 tsp Apple Cider Vinegar
1/2 C Avocado Oil
1 tsp Pure Vanilla Extract
1 1/2 C all-purpose Flour
1 1/2 tsp Baking Powder
1/2 tsp Baking Soda
1/4 tsp Sea Salt
Directions
- Preheat oven to 350F & line a muffin holder with liners
- Add milk & vinegar to a large mixing bowl and let set a few minutes to curdle/activate
- Add oil & vanilla and whisk
- Add dry ingredients to a sifter
- Sift over wet ingredients & use a whisk to blend until no large lumps remain. Texture should be thicker not runny
- Bake for 20-25 minutes
- Let cool completely
- Add Betty Croker Fluffy White Icing into a medium size mixing bowl
- Add green food colouring & mix with a whisk, adding more green until desired coloured is obtained. (I added some teal to get the vibrancy I was after)
- Once cupcakes have cooled apply icing as desired
- Serve & enjoy these vegan St. Patrick’s Day Cupcakes

These vegan St. Patrick’s Day cupcakes turned out so yummy! I didn’t add any sugar to the cake mix because I always find icing to be sweet enough. You are more than welcome to but I think you will be pleasantly surprised by how tasty these are without it.

Yes! We try to be gluten free too. Bob’s Red Mill makes gluten free pre-mixes that I think would sub nicely.

Nice! I haven’t used that before but love Oatly. I found the ones with sweetener tend to get a little gummy.
